Our Services
Oriental pastries
The art of Moroccan sweets is a discipline in its own right. Rahal Maître Traiteur preserves its recipes, its gestures and its generosity, passed from hand to hand without interruption.
Our approach
Oriental pastries
Pastry did not come after cuisine at Rahal Maître Traiteur; it came first. Haj Rahal Essoulami began with sweets from 1946, before institutionalising the catering profession. The boutique La Comtesse, opened later in Casablanca, perpetuates that sweet heritage. Its Moroccan high pastry, almond confections, traditional biscuits, honey pieces, has held the loyalty of entire families across several generations.
Oriental pastry is work of the hands. Almond paste is weighed to the gram. Orange-blossom syrup is dosed by experience, not by the spoon. The gestures that shape a ceremonial almond piece are not learnt in a few weeks; they are transmitted. The House trains its pastry team within that continuity, without accelerating what requires time.
The House's pastries accompany every format: an honour platter for a wedding, a gift box for a foreign delegation, a sweet table for a gala, a private commission for a family. Every piece is prepared to order. The House does not deliver industrialised pastries, even for large volumes.

Frequently asked questions
Oriental pastries
What distinguishes handcrafted Moroccan pastry from an industrially produced equivalent at a prestige event?
Hand-shaped pastry rests on gestures that cannot be delegated to a machine: almond paste weighed to the gram, orange-blossom syrup dosed by experience, the form of each piece obtained by the pressure of a thumb. Rahal Maître Traiteur prepares all its pastries to order, without ever resorting to industrialisation, including for large volumes. This artisan discipline, passed down without interruption since the House was founded, is what distinguishes a ceremonial sweet table from a simple catering supply.
Does the House prepare Moroccan pastries for events in the south of the Kingdom, Agadir, Dakhla, Laayoune?
Yes. Rahal Maître Traiteur operates across the entire national territory, from the major cities of the north to the provinces of the Deep South. The House deploys its pastry team, its trusted ingredients and its serving platters on site, without distance causing the slightest concession on the quality of the pieces delivered.
Can we order a fully personalised honour platter or sweet table for a wedding?
This is precisely the House's approach. There is no standard platter: every composition, the choice of pieces, the arrangement, the formats, the volumes, is built around the ceremony, the number of guests and the family's wishes. The House works to a firm commission, takes time for the prior exchange, and proposes nothing interchangeable from one wedding to the next.
Does the House compose gift boxes of Moroccan pastries for foreign delegations or as ceremonial gifts at official receptions?
Yes. A box of oriental pastries, almond pieces, candied confections, ceremonial sweets, is one of the most eloquent gifts a host can offer a foreign delegation. Rahal Maître Traiteur prepares these boxes to order for corporate galas, institutional events and occasions where a sweet gift speaks more than words. Every box is composed to commission, never prefabricated.
How do we place an order with Rahal Maître Traiteur for oriental pastries?
For any order, an honour platter, a wedding sweet table, a gift box for a delegation or pastries for a gala, write a first description of the project via the contact form or call the House directly on +212 522 25 25 13. The House considers each request and responds with a proposal adapted to the occasion and the volume required.
