Oriental pastries

Pastry did not come after cuisine at Rahal Maître Traiteur; it came first. Haj Rahal Essoulami began with sweets from 1946, before institutionalising the catering profession. The boutique La Comtesse, opened later in Casablanca, perpetuates that sweet heritage. Its Moroccan high pastry, almond confections, traditional biscuits, honey pieces, has held the loyalty of entire families across several generations.

Oriental pastry is work of the hands. Almond paste is weighed to the gram. Orange-blossom syrup is dosed by experience, not by the spoon. The gestures that shape a ceremonial almond piece are not learnt in a few weeks; they are transmitted. The House trains its pastry team within that continuity, without accelerating what requires time.

The House's pastries accompany every format: an honour platter for a wedding, a gift box for a foreign delegation, a sweet table for a gala, a private commission for a family. Every piece is prepared to order. The House does not deliver industrialised pastries, even for large volumes.
