Our Story
One idea has animated Rahal Maître Traiteur across three generations: to receive is not simply to serve, it is to honour. From the family table to the highest international gatherings, the precision of craft and the spirit of hospitality have passed from one generation to the next without interruption. The House carries this inheritance as a commitment, not as a distinction.
Our heritage
In 1946, Haj Rahal Essoulami laid the foundations of the House in the old Medina of Casablanca, close to the International Fair. This was never conceived as an ordinary commercial venture. From the outset, he understood it as a vocation: to bring to every table the precision of craft, the generosity of welcome, and the exigence that Moroccan hospitality has always carried within itself. What came into being that day was not a business. It was a commitment.
Decade after decade, the House established itself through the evidence of its work alone. The established families and institutions that chose it did so not for what it proclaimed, but for what it delivered. This art of hospitality, measured, attentive, faithful to a certain idea of ceremony, quietly built a standing that neither fashion nor circumstance has worn away. The most demanding expression of Moroccan hospitality found in Rahal Maître Traiteur a house that practises it and passes it on.
Three generations have followed one another without the House losing its bearing. The gestures have been transmitted as one transmits a living memory: through observation, through shared exigence, through the refusal of any shortcut. What changes with time, the scale of receptions, the contexts, the horizons, does not touch what founds the House. It remains a luxury catering house in Morocco, rooted in Casablanca, faithful to what a founder understood in 1946: that to receive is a form of respect.
This heritage, Rahal Maître Traiteur now carries beyond the borders of Morocco. Each major diplomatic gathering where the House is called upon becomes an occasion to represent the excellence of Moroccan hospitality at the highest level.
A word from the House

Of a family's perseverance in serving its guests with honour. Of the resolve of the generations who followed, determined to make that dream a reality."
Keeper of a tradition, that of receiving well, the House aspires also to be an artisan of a transformation: raising Moroccan gastronomy and savoir-faire to the highest level of the profession. This dual commitment, heritage and exigence, has not changed since the beginning.
It comes from the land and returns to it: each time one must choose ingredients with care, compose a table that says something of the house receiving it, or carry Moroccan gastronomy to where it becomes a country's ambassador. At COP22, held in Marrakech in 2016, that founding gesture resurfaced: to serve one's land as much as one's guests.
To grow a family house without surrendering what founds it is a daily commitment. Today, young teams trained in the gestures of the past see to it that the enchantment of the table endures.

For several decades, Rahal Maître Traiteur has been called upon to serve international gatherings at the highest level. On each occasion, the House carries this exigence beyond its own borders.

In November 2022, the House operated the catering service for the 27th United Nations Climate Conference, held in Egypt.
"The United Nations, organising COP27 in Egypt, called upon the services of Groupe Rahal to prepare meals for the 40,000 guests from 196 countries."
In October 2023, the House designed and operated the entire catering programme for the Annual Meetings of the World Bank and the International Monetary Fund, held in Marrakech.

In May 2024, the House represented Morocco in Banjul, Gambia, at the 15th Summit of the Organisation of Islamic Cooperation.

What grounds us
The gesture precedes the recipe. Every preparation rests on a savoir-faire transmitted hand to hand: the cut, the slow cook, the dressing of the plate. Rahal Maître Traiteur preserves these gestures because they cannot be replaced by any industrial process.
The guest arrives before the meal. Moroccan hospitality is a posture: discreet attention, a generous table, service that anticipates without imposing. The House made it its way of being long before it made it its profession.
The founding year is not a figure: it is a responsibility. The House preserves the old recipes, trains its teams in the inherited gestures, and refuses the standardisation that erases what a kitchen has taken decades to build.
The House is Casablancan by birth and by disposition. It has grown with the city, its business salons, its established families, its districts of formal reception. This anchorage remains the point from which it reaches outward, from Morocco to the world.
